Horse-radish - apple sauce (Apfelkren). Austrian cuisine

Ingredients:
600 gr. green apples
40 gr. horse-radish
20 gr. sugar
1 tsp. salt
30 ml lemon juice
150 ml white wine

Preparation and serving:
Mix the sugar and the lemon together with the white wine. Peel and pip the apples and add them too. Boil until the apples become soft. When it's ready, puree the apples and add the grated horse-radish. Stir well.

This is a traditional garnish for Vienna-style boiled beef (Tafelspitz).
