Potato soup with bacon (Kartoffelsuppe mit Speck). Austrian cuisine

Ingredients:
500 gr. potatoes
2 carrots
1 onion
150 gr. smoked bacon
1 l beef stock
1 tsp. oregano
Pepper
Salt
1/2 bunch of parsley

Preparation and serving:
Dice the bacon and stew in some butter. Add the fine chopped onion and cook until glasy. Dice the potatoes and the carrots and add them to the bacon and onion. Stew and stir about 5 - 6 min. Add the stock, flavour with oregano, salt and pepper and leave it to boil for 30 min.
Serve sprinkled with fine chopped parsley.
