Ingredients:
250 g. mushrooms
2 onions
50 g. butter
1.75 l chicken stock
6 slices dry bread
50 ml cream
1/2 bunch parsley
Black pepper
Salt
Preparation and serving:
Wash the mushroomsand, chop fine 200 g. of them and cut in thin slices the rest 50 g. Chop fine the onion and the parsley. Saute the onion in 2/3 of the butter until gets golden. Add the fine chopped mushrooms and saute for 3 - 5 min. Add the stock and bring it to the boilq then leave it to simmer for 15 min. Saute the rest of the mushrooms in the rest of the butter. Crush fine the bread, removing before that the crust. When the soup is ready, add the bread and leave it to boil for 5 min. Just before remove it from the heat, add the mushrooms and the cream and stir.
Serve sprinkled with fine chopped parsley.
