Ingredients:
6 anchovy filets
4 eggs
150 g. green salad
150 g. curly green salad
150 g. red salad
1 bunch parsley
1 bunch green onions
100 ml olive oil
30 ml vinegar
Black pepper
Preparation and serving:
Boil the eggs for 6 minutes. Wash, drain and cut the salads. Chop finely the parsley and cut the onion in rings. Puree 3 of the anchovy filets together with 30 ml olive oil until you get homogeneous paste. Add the rest of the oil and the vinegar, flavor with black pepper and mix well. Put together the salads and the parsley in a salad bowl pour over the anchovy dressing and mix well, but gently. Arrange over the salad the rest of the anchovy filets, sprinkle with the green onion and garnish with egg slices.
