Ingredients:
1 cucumber
2 avocados (riped)
1 clove garlic
30 ml vinegar
30 ml olive oil
1/2 bunch parsley
Black pepper
Salt
Preparation and serving:
Peel the cucumber, cut in rings and salt gentle. Leave it for 1 hour. Cut the avocado in halves, remove the kernel and with a spoon hew out also part of the meat to form a „basket“. Dice the hewed meat. Mix together the vinegar, olive oil and the salt. Add the pressed garlic. Drain the cucumber and add it to the mix. Add the diced avocado meat. Flavour with pepper, stir gently and sprinkle with fine chopped parsley. Fill the avocado “baskets” with the mixture.
Serve chilled. Offer white, dry wine.
