Bavarian potato salad (Bayrischer Kartoffelsalat). German cuisine

Ingredients:
1 kg. potatoes
2 big pickling cucumbers
1 big onion
2 apples
250 ml meat stock
60 ml vinegar
60 ml olive oil
1 tsp. sugar
1 tsp. salt
1 tsp. mustard
1/2 tsp. black pepper
150 g. smoked bacon
1 sprig basil

Preparation and serving:
Cook the potatoes in water, being careful not to overcook, then peel and slice. Heat the stock and add the vinegar, oil, sugar, mustard, salt and the pepper. Stir few minutes until it’s homogeneous. Dice the cucumbers, apples, bacon and the onion. Fry the bacon without oil for few minutes, then add to the potatoes and pour over the stock. Add the cucumbers and the apples and stir well until the liquid is absorbed.
Serve garnished with basil leaves.
