Ingredients (serve 4):
500 g. potatoes
300 g. corned beef
125 ml milk
125 ml vegetable stock
1 onion
20 g. butter
50 g. red beetroot
8 corned heringas
4 pickled gherkins
4 eggs
Black pepper
Salt
Preparation and serving:
Labskaus is an old, popular fisherman's dish. Its especially popular in Hamburg. Peel an dice the potatoes, then cook in water with salt. Chop finely the onion, then saute until it gets glazy. Mix together the milk and the stock and heat, but do not allow to boil. Drain the cooked potatoes and add to the milk and stock, add also the onion. Dice the meat and add it to the potatoes. Chop finely the beetroot and add it to the potatoes. Flavour the mix with salt and black pepper. Fry the eggs in the butter and flavour.
Serve in preheated plates with an egg on each portion, a gherkin beside and 2 rolls of herring for each.
