Ingredients:
500 ml milk
250 g. rice
125 g. butter
100 g. sugar
5 eggs
Peel of 1 lemon (grated)
1/2 tsp. salt
Preparation and serving:
Pour the milk in a pot and bring it to the boil. Then add the rice, stirring constantly. Add also the sugar, salt and the butter stirring all the time. Split the yolks and the whites. Remove the pot from the heat and add 5 beaten yolks. Snow beat the whites, add them and stir well. Add the lemon peel and mix again. Pour the mix in an oiled baking tin. Bake it in a preheated at 220°C oven for 50 min.
