Kavarma in Radomir art (Каварма по радомирски). Bulgarian cuisine

Ingredients (serve 4):
500 gr. pork (leg, round)
150 gr. bacon
450 gr. leek
600 gr. capsicum
4 eggs
4 chillis
Savory
Red pepper
Salt

Preparation and serving:
Roast the capsicum, then peel them. Cut the leek into slices. Dice the pork and the bacon (1 - 1.5 cm.). Fry them in a pan with just a bit of olive oil until they become golden-brown, then take them out. In the remaining oil fry the leek until it softens. Cut the capsicum in pieces (1 - 1.5 cm.) and add them to the leek together with the spices. Fry for 1 - 2 min., then add the meat and fry for another 1 -2 min. Pour the mixture in 4 earthenware pans, put in each a chilli an bake in an oven at 200°C for about 10 min. The oven should be initialy not heated. The time is counted after it reaches the baking temperature. After the 10 min. brake an egg over each of the pans and sprinkle with red pepper and savory. Bake untill the eggs are cooked.
