Chicken croquettes with ham (Kippen kroketjes). Dutch cuisine

Ingredients:
50 g. butter
1 onion
50 g. flour
300 ml milk
300 g. chicken brests
50 g. ham
2 tbsp. parsley (finely chopped)
1 tbsp. hot mustard
Bread-crumbs
Sunflower oil
1 lemon
Black pepper
Salt

Preparation and serving:
Chop finely the onion. Cook the chicken in water and then chop it very finely. Dice the ham. Melt the butter in a deep pan and add the onion. Saute for 3 - 4 min. until it gets golden. Add the flour and saute for 1 min. stirring constantly, then add the milk and continue stirring for 2 min. until you receive homogeneus thick mash. Add the chicken, ham, parsley and the mustard. Flavour with salt and black pepper.
Leave the mix to cool down. Use a spoon to make spheres, coat them in bread-crumbs and leave for 30 min. in a fridge.
Fry the croquettes in oil at 190°C. When ready, put them on a paper to drain.
Serve hot, arranged with lemon slices.
