Ingredients:
700 gr. flour
1/2 tbsp. salt
2 tsp. mixed spice
180 gr. lard
15 gr. fresh yeast
2 tsp. sugar
450 ml water
175 gr. currants
Preparation and serving:
Use just a little sugar and warm water to make a cream of yeast. Sieve the flour, salt and mixed spice into a bowl, then rub in the lard. Add the yeast and stir in the remaining water. Mix until smooth and pliable, then leave to rise. Knead in the currents and put into a loaf tin. Leave until completely risen before baking in a fairly hot oven, until it gets golden-brown.
