Ingredients (serve 6):
500 g. potatoes
2 green apples (slightly sour)
3 tomatoes
1 small green capsicum
40 ml Muscat wine
80 g. olives (stuffed with capsicums)
50 g. Chester cheese
80 g. ham
2 onions
3 sticks green onion
For the sauce:
30 ml vinegar
100 ml olive oil
1 tsp. mustard
Black pepper
Salt
Preparation and serving:
Cook the potatoes in water with salt. Leave to drain, peel and cut in thin rings. Put in a bowl and pour over the white wine. Peel and dice the apples. Skin the tomatoes, remove the seeds and cut in quarters. Cut the capsicum and the olive oils in rings. Dice the cheese and finely chop the onions. Julienne the ham. Add to the potatoes the apples, tomatoes, capsicum, olives and the cheese.
Sauce: mix together the mustard, vinegar, salt and black pepper. Trickle in the olive oil in thin, stirring constantly with a mixer.
Split the salad in 6 plates, pour over the sauce, sprinkle with the onion and the ham.
Serve Chilled. Offer dry white Muscat wine .
