Stuffed tomatoes (Tomates ninette). French cuisine

Ingredients:
6 tomatoes
2 eggs
1 can tuna fish (166 g. substance)
1/2 bunch parsley
1 tsp.lemon juice
1 can vegetable mix (200 g. – pea, carrots, potatoes)
Few leaves salad
1/2 lemon
6 anchovy filets
6 black olives
Black pepper
Salt

For the mayonnaise:
1 yolk
1 tsp. mustard
250 ml sunflower oil

Preparation and serving:
Hew out the tomatoes to prepare them for stuffing. Flavour with salt and leave beside. Prepare mayonnaise from the listed products. In a bowl mix well the eggs, tuna fish, fine chopped parsley, 3 tbsp. mayonnaise and the lemon juice. Flavour with salt and pepper. Stuff the tomatoes with the received paste. Cover serving plate with salad leaves. Arrange over them lemon slices and order the tomatoes over them. Mix the vegetables with the mayonnaise and use it to arrange around the tomatoes. Roll each olive in anchovy filet and put one on each tomato.
Serve chilled. Offer Rose.
