Hot potato salad (Heiss Kartoffelsalat). German cuisine

Ingredients:
5 big potatoes
200 g. smoked bacon
2 onions
70 ml vinegar
70 ml water
70 g. sugar
Black pepper
Salt

Preparation and serving:
Cook the potatoes in water, being careful not to overcook, then peel and slice. Dice the bacon and fry in a pan at moderate heat until it’s crispy. Finely chop the onion and add it to the bacon, stirring constantly until it’s golden. Separately mix the vinegar, water and the sugar and heat stirring constantly until the sugar is absorbed. Add it to the bacon and onion, add the potatoes and stir gently until the sauce is absorbed by the potatoes for about 10 min.
Serve warm.
