Lamb skewers/ Souvlaki (Αρνί σουβλάκι). Greek cuisine

Ingredients:
1 kg. lamb leg
150 ml olive oil
Juice of 1 lemon
2 tsp. oregano
Black pepper
Salt

Preparation and serving:
Cut the meat in cubes of 2 – 3 cm., then string on metal, or wooden skewers. Mix the olive oil, lemon juice, salt and the pepper. Put the skewers in a suitable pan and pour over the marinade. Leave it for about 1.5 hours. Grill the skewers, preferably on wood, turning them from time to time. When they are ready, sprinkle over the oregano.
Serve hot, with a side dish of fried potatoes and tomatoes.
