Tomato sauce (Σάλτσα τομάτα). Greek cuisine

Ingredients:
1 kg. tomatoes
3 cloves garlic
120 ml olive oil
1 bunch parsley
2 tsp. salt
1/2 tsp. black pepper
1 tsp. sugar
5 - 6 basil leaves

Preparation and serving:
Chop finely the garlic and the parsley, then saute in the olive oil for few minutes. Peel and finely chop the tomatoes. Add them to the olive oil together with the rest of the ingredients, bring to the boil and leave the sauce to simmer for 50 min. until it gets thick.
Served hot, or chilled together with meat, or meatballs.
